Peanut Butter and Jelly Valentine’s Chocolates

Welcome back to our monthly series of easy recipes from our partner Lexi, a loyal Plaine Products customer and vegan home cook. Just in time for Valentine’s Day, Peanut Butter & Jelly Valentine’s Chocolates!

Peanut Butter & Jelly Valentine’s Chocolates

If you’re looking to skip the individually wrapped chocolates this Valentine’s Day, you’ll want to try @lexi.harpin’s delicious Peanut Butter & Jelly Valentine’s Chocolates.

INGREDIENTS:
1 c. dark chocolate chips or chunks
1 tsp. coconut oil
1/4 c. natural peanut butter (smooth or chunky)
1 tbsp. plain breadcrumbs
1/4 tsp. vanilla extract
Strawberry fruit spread/jam (or any other you enjoy)

INSTRUCTIONS:

1) To a medium-sized bowl add 1/2 c. of the dark chocolate and 1/2 tsp. coconut oil. Microwave in 30-second intervals, mine took 90 seconds. As shown in the video, don’t microwave the chocolate until every piece of chocolate is melted (this ensures it doesn’t burn) because it will continue melting from the heat of the bowl as you stir. Stir until silky smooth.

2.) To any silicone mold you have (or cupcake liners) add a spoonful of melted chocolate and use a spoon to bring it up the sides to form a cup. Repeat until chocolate is finished. Add to the freezer for ~ 10 minutes or until hardened.

3.) In the meantime prepare the peanut butter filling. To a separate small bowl add the peanut butter, breadcrumbs, and vanilla extract. Stir until combined. Optional: add a little maple syrup to make it sweeter, I personally don’t because I enjoy the sweetness from the jam.

4.) Take your chocolate out of the freezer and add a small spoonful of peanut butter and jam to each chocolate cup. Repeat until all are filled.

5.) Lastly melt the remaining 1/2 c. dark chocolate with 1/2 tsp. coconut oil. Pour enough melted chocolate to completely cover the filling and form a chocolate cup. Once finished, add to the freezer for ~ 20 minutes.

Store these in an airtight container in the fridge or freezer!
